What temp thermostat should I be running in my 86 2M4? The Canadian Tire options are 195 degree (which apparently is stock temp), 180, and 160 in various brands.

The car will be driving in the Lower Mainland, which is roughly -10 to +30 Celsius (for any member not familiar with lower mainland climate temperatures). I should also mention, the car's engine is completely stock.

195 in the fall/winter/spring and 180 in the summer.  Never a 160.

So I should take back the 195 for a 180?

They also recommended changing the gasket. On my 350V8 I would always change gasket. Doesn't really seem like I have to on the Fiero.

Nope - no gasket involved (short the o-ring which is on the new t-stat)

Yeah that's why I needed a new one the o-ring was shot. I had to fish it out with my finger.

Suggest a 180 and even consider a low temp switch if you have heating issues in the summer

So we all agree? For a 2m4 I should be running a 180? If so I'll take back my 195 tomorrow and pick up a 180.
