So i've picked up a new center console for my 85gt out of a 86gt only problem is it has the extra gauges on the top (battery and oil pressure i believe not looking at it right now), and mine didnt have those before ( i dont know if it was an option or wether they just weren't around till 86)

NOW MY QUESTION
Can they be wired in without much grief?
THANKS!

It is only an 86-88 V6 option.   However so long as you got the main harness with the gages its a really simple matter to splice the wiring into the 85 harness.   The 85 cluster has all the correct wiring, just never extended over to the center.  So you need the harness that came from the gages then just slice it in and you are done.   I have done at least 3 85 V6 cars.
