Seriously though, with a properly functioning cooling system, what's the need to make the thermostat adjustable?

You can let it run warmer for daily driving (Mileage) and colder for racing (Power/Safety). Would be my guess, anyways.

The thing in that picture doesn't seem to be able to do that.  It looks like a fan switch not an internal thermostat.

That's exactly what it's listed under... Fan Controllers/Sensors.

You guys are vary much right,all it does is turn the fan on an off.its not a Adjustable internal thermostat.But with being able to dial it in to come on @ a lower temp,your volume of cooling will be a lower temp returning to the motor.

That would be OK if your thermostat did not close the circulation and stop the water flow making the rad fan run for nothing. 

         It is a nice mod if you just want to reduce the turn on fan temp slightly lower than stock but not below say 190f ON temp, or better yet if you wanted it to control some engine bay fans.  Getting cool air over the intake will be more of a benefit than running the water cooler.

Dave has the right idea for sure.  I would take that thing and hook it up to fans in the engine compartment.

I've been thinking of doing this myself.
