Is anyone interested in white gauges? I contacted a company in the US and they are offering a custom set for $40.

Maybe if we ordered several we could get a better price.

They need a set of (scrap) Canadian gauges sent to them so they can make the overlays for Kmh as they only carry Mph.

Just as a heads-up, the link doesn't work. Just go to their page, click "White Gauges" on the left, then click Pontiac, then Fiero and then you're there. It should be noted they do a whole bunch of colours (Orange, Red, Purple, Blue, etc...) and some patterns (Stock, Carbon Fibre, Custom, etc...), although any of the options beyond white gauges cost $30 extra. Which isn't bad at all, truth-be-told.

While I would want a stock set, I'm wondering if they could do a "stock-looking" 7000RPM tach... Would look pretty nifty. I'm down if they can adjust the red-line up for me without murdering me in cost.

Yes I think you are.  Personally I am waiting for Dawgs 250kph speedo face.

As for the rest of the gauges, I already have the white face oil pressure and voltage gauges here.  The faces are installed on the cluster, I have just not bothered to install the cluster in the car.

The only gauge that I prefer in English vs Metric is the oil pressure gauge.  I don't like using kpa, my brain always things oil pressure as psi.

Aw, see I prefer MPH for speed as well. I don't know what's fast in KPH, I have to translate it to MPH for reference, but I know that 180MPH is blisteringly quick.
